Subject: Enterprising children

The older kids  (John, Fernando, Faith, and Rolman- well actually John and Fernando are the workings of the operation.  Faith is helper and Rolman is law dog/quality control) have a new enterprise that takes up a good bit of time.  It is making plantain chips, bagging them, stapling them to make "ristras" (this is a cardboard strip),  and delivering them to local pulperias.  One pulperia, the one right by the soccer field, uses them to make a wonderful Honduran tipico plate of food to sell to the soccer watchers on Sunday.   This plate is what we call Honduran Nachos.

The kids use our plantains and we now have a gas fryer/stove homemade contraption that they use to cook with.  This work usually takes place at night, the time of night I prefer to be in bed sleeping, the 11 o'clock hour.  But I love hearing them on the front porch of the other house, laughing, singing, yelling, and frying.  The money made is split up between them and us, not much in the end, but enough for Fernando to buy a pair of purple corderouy pants.  Evidently those have come back around.

We have over 1000 plantain trees now.  We sell 500 a week to a local school.  Now the guys use about 100 plantains a week to make the chips to sell.

I used to buy a bag of these each time I took a bus trip to or from Teguc. to be with Gerardo in the hospital.  He would always tell me who to buy from.

This picture was before Jose the Welder invented the new stove that they use.

They sometimes have to make the chips in the daylight if they get a rush order.  I think they prefer the nightime cooking, not so hot.

I am so thankful that God has provided ways for our guys to work and learn; not so much about making money.  I pray that each child here will learn diligence, honesty, and how to listen to God as to what to be doing and when to do it.
