Subject: Famous Brownie Code Cracked

OK, in all humility, this time I totally nailed it.  

If you know the tune to Weird Al's "White and Nerdy", you can start humming it now as I describe the discovery.

There is a certain brownie mix, sold even in Honduras, and it ain't cheap. I will not mention any names, don't want to break any copyrights, but it rhymes with "hear a smelly" and starts with the letter "G". It's the type of mix that is very difficult to match quality wise, even with the best of homemade recipes. To be honest, I've only tasted one homemade brownie that was better, and I bow to Mrs. Foster's baking superiority, seriously and without a trace of facetiousness.

So what I have been looking for is:

  • Outstanding "I can't touch that" taste and texture
  • Something that will begin to reduce our stockpile of cocoa powder
  • Economical, for us and consumer
  • Simplicity for consumer

So if you're still humming White and Nerdy, start humming a little louder. Here is how we hacked the mix recipe. From the manufacturer, we copied the nutrition label into a spreadsheet. Then we did the same for the ingredients and looked up the macro nutrient information for each ingredient. Based on data such as fat, sugar, carbohydrate and fiber content, we deduced the quantity added for each. I will not publicly give the mix recipe, but I will tell you how easy it is to use our mix:

Add 1 egg, 1/2 cup vegetable oil and 1/3 cup water to Chocolate De Veras Uber Brownie Mix

(OK, I'm still working on the name, but uber will do for now)

Mix vigorously, as this will help a good top crust to form.

Spread in greased 8"x8" pan, bake at 325F for 30 minutes, cool on wire rack. Enjoy!
